Smoked Lamb Shoulder with Garlic and Rosemary
The Story
Lamb shoulder is one of the oldest cooks in human history — it has been pit-roasted across every culture that kept sheep, from the Mediterranean to the Middle East to the American Southwest. The shoulder's high collagen content requires time and heat to break down, and the reward for that patience is meat that shreds effortlessly, rich with the rendered fat and smoke that Valhalla Blend was designed to complement.
Instructions
- Stud and Season. Using a small knife, make deep slits every 2 inches across the shoulder. Push a sliver of garlic and a small rosemary sprig into each slit. Rub all surfaces with olive oil, then coat generously with Valhalla Blend — press it into every surface including the bone side. Let rest overnight in the refrigerator.
- The Smoke. Fire the smoker to 250°F with oak or cherry wood. Place lamb shoulder bone-side down. Smoke for 5–6 hours until the bark is set and the internal temp reaches 165°F. Wrap tightly in butcher paper with ½ cup red wine poured inside the wrap. Return to the smoker for 3–4 more hours until probe tender at 200°F.
- Rest and Serve. Rest in the wrap for 1 hour. Tear the meat from the bone directly — it should fall away without resistance. Pile the pulled lamb on a platter with the accumulated juices poured over. Serve with flatbread, pickled vegetables, and a yogurt-based sauce to balance the richness of Valhalla and the fat of the shoulder.
