The Story

Baking powder in a dry rub is the single most impactful technique for crispy chicken skin without a fryer. It raises the pH of the skin surface, which promotes more aggressive browning and drying. Combined with an overnight rest in the refrigerator, the skin becomes almost papery before it hits the heat — and that papery surface shatters in the smoke. Valhalla Blend is the flavor delivery system riding on top of this technique.

Instructions

  1. Dry Brine Overnight. Toss wings with baking powder, salt, and Valhalla Blend. Spread on a wire rack over a sheet pan. Refrigerate uncovered overnight. The skin will look matte and dry by morning — exactly right. Do not rinse them before cooking.
  2. The Smoke. Fire the smoker to 300–325°F — slightly higher than usual to render the fat from the skin while smoking. Use cherry or apple wood for a lighter smoke that doesn't overwhelm the Valhalla Blend. Cook for 1 hour, then flip wings and cook another 20–30 minutes until the skin is crispy and the internal temp is 175°F+ for maximum collagen conversion in the joint.
  3. Optional Finish. For a sweet heat glaze, brush with hot honey in the final 10 minutes of the cook. The honey will caramelise over the Valhalla bark and create a lacquer. Or serve them dry — the Valhalla rub is complex enough to need nothing.

Pro Tips

  • 300–325°F for wings, not 250°F. The higher heat renders the subcutaneous fat and crisps the skin in a way that low-and-slow cannot achieve. Wings need temperature, not just time.
