The Story

Uncured pork belly is the cook before the cure, the slab before it becomes bacon. Instructions

  1. Season and Overnight. Score the fat cap in a crosshatch pattern ½ inch deep — this allows the Valhalla Blend to penetrate the fat layer and assists in rendering. Mix Valhalla Blend with brown sugar and extra paprika. Coat all surfaces generously. Refrigerate uncovered overnight.
  2. The Smoke. Fire the smoker to 250°F with apple wood — its mild sweetness complements the Valhalla Blend's sweet heat without competing. Place belly fat-side up. Spritz with apple cider every 60 minutes. Smoke for 5–6 hours until the internal temp reaches 200°F and the fat has rendered to near-transparency when you poke it with a thermometer.
  3. Rest, Slice, and Use. Rest 30 minutes minimum. This belly can be served as a centerpiece — sliced into 1-inch squares and served as burnt-end style bites, or seared briefly in a hot cast iron for contrast. It also serves as an upgrade ingredient: cube it and use it to elevate baked beans, ramen, fried rice, tacos, or anywhere you want an impossibly rich pork element.
