Smoked Tri-Tip with Charred Crust
The Story
Tri-tip is California's contribution to American BBQ — a triangular cut from the bottom sirloin that was virtually unknown outside of Santa Maria Valley until the 1990s. The traditional seasoning is simple: salt, pepper, garlic, and red wine vinegar marinade. Valhalla Blend takes that tradition and adds the complexity of warm spices and sweet heat, creating a version that honors the technique while distinctly departing from it.
Instructions
- The Reverse Sear Method. Season the tri-tip with Valhalla Blend and olive oil. Dry brine for at least 2 hours. For the reverse sear: smoke the tri-tip at 225°F with oak until the internal temp reaches 115°F (about 60–75 minutes). Then pull it from the smoker and sear directly over maximum heat for 2–3 minutes per side to build the final crust. Rest 10 minutes. The reverse sear gives you edge-to-edge medium-rare with a pronounced crust.
- The Critical Slice. Tri-tip has two distinct muscle sections with grain running in different directions. Before slicing, identify the seam where the two muscles meet and separate them. Slice each section against its own grain in ¼-inch slices. Slicing against the wrong grain makes this cut chewy; against the correct grain it's remarkably tender.
- Serve. Slice and serve with fresh salsa fresca, grilled bread, and pinquito beans if you're honoring the Santa Maria tradition. The Valhalla bark adds a smoky sweetness that the traditional preparation lacks — and the locals would debate its merit, which is exactly the right conversation.
Pro Tips
- Find the seam between the two muscles before you start cutting. Two separate grains mean two separate cuts. Slice each section independently or you'll get chewy results from the section you cut the wrong way.
